preheat oven to 375°f
chop off the tops of 2 shallots and ~3 bulbs of garlic and wrap in tin foil
drizzle tin foil with olive oil and salt
bake tin foil for 1 hour and let it cool
squeeze out the garlic and shallots and mix with 1 cup room temperature cream cheese, 1 cup sour cream, 1/3 cup parmesan cheese, 1/2 cup chopped parsley, 1/4 cup chopped chives, and seasoning to taste (salt, paprika, onion powder, garlic powder, red pepper flakes, etc.)
