toast half a packet of pho spices
toast onion and ginger until browned and aromatic
combine sugar, chicken drippings, chicken bones and skin, pho spices, onion, ginger, and enough water to cover
simmer for ~30 minutes and remove spice bag
season to preference with chicken bouillon, fish sauce, salt, shrimp paste, hoisin sauce, etc.
serve with pho noodles, bean sprouts, chili oil, etc.
