cook sliced bacon in a pot
remove bacon from pot, sauté 3-4 cloves of minced garlic and half an onion, chopped
add in 1/4 cup (4 tbsp) butter and melt
mix in 1/4 cup flour
add in 4 cups chicken broth, 1 cup heavy whipping cream, 1 and 1/2 cups milk, 1/2 cup sour cream, and salt and pepper
add in 3 lb potatoes, skinned and chopped
bring to a boil, then lower the heat and simmer until your desired consistency (~ 40 minutes; optional: lightly purée the mixture with an immersion blender for a creamier soup)
