filipino ketchup meatloaf

    instructions

    put parchment paper on a loaf pan (9x5 inch) and butter it

    preheat the oven to 375°f

    put 2 lbs 85%/90% lean ground beef, 1 medium finely chopped (sweet) onion, 2 large eggs, 3 minced garlic cloves, 3 tbsp (filipino sweet) ketchup, 3 tbsp finely chopped fresh parsley, 3/4 cup panko breadcrumbs, 1/3 cup milk (or 1/6 heavy whipping cream and 1/6 water), 1 1/2 tsp salt, 1 1/2 tsp italian seasoning, 1/4 tsp ground black pepper, and 1/2 tsp ground paprika into a big bowl

    mix the meat and stuff

    transfer to the loaf pan evenly by pressing meat down

    bake meatloaf for 40 minutes

    put 3/4 cup (filipino sweet) ketchup, 1 1/2 tsp white vinegar, 2 1/2 tbsp brown sugar, 1 tsp garlic powder, 1/2 tsp onion powder, 1/4 tsp ground black pepper, 1/4 tsp salt into a small bowl

    put sauce over meatloaf

    bake meatloaf for 15-20 minutes (or until the internal temperature is 160°f)

    rest meatloaf for 10 minutes

    drizzle baking juices from the pan onto the meatloaf when served
